I usually knit socks on DPNs, I've never had any trouble with this, no ladders where the needles meet, I don't find it that fiddly, though I do admit I can forget to breathe when I'm grafting!
My main concern with socks on two needles is that there is a seam running under to foot, I would find this deeply irritating (and I started knitting socks in the first place as I can't bear the feeling of a seam across my toes, which almost all commercial socks have, I have to wear them inside out!) when walking about. However, baby's not going to be walking about for a good while, so I think he won't mind.
They start looking like a little scarf:

Then you get to the heel bit, and they look very odd indeed (another thing I didn't really enjoy was all the placing of stitches on holders):

Then you fasten it all together:

and cast off, so you have this:

Then you seam up the back of the foot, and there are the socks:

They were really really quick, but I think would have been even faster on DPNs, but it was something I wanted to try out. I don't think I'd do it again though.
Pattern: Tootsie by Debbie Bliss from Baby Cashmerino 2, re-published in Issue 4 Let's Knit! (Mar '08)
I used: oddments of sock yarn; Garnstudios Fable Superwash (variegated), and Grignasco Strong (orange) on the needles recommended. Size: 3-6 months
I like 'Let's Knit' a lot, it has some really smashing patterns (and some howlers, though this seems true of all knitmags) and interesting articles - this month's on 'Eco Wool' for example. It seems to have a bit of a 'younger' outlook (I'm not that young either...!) than Simply Knitting, which occasionally reminds me of my mother's Womans Weekly.
I'm now doing my own slightly altered version of the Criss Cross scarf in the current issue.

They're lovely! There's something really fetching about clothes for "little people". =)
